I know most of us (including me) aren't going back to school but if you are like me then the rush is giving you a little boost to get your life back in order. Something about summertime makes me think that I am supposed to eat tacos everyday and spend every spare minute outside playing. Well, now I am behind on lots of things and need to start taking strides to catch up.
The first thing on my list of to-do's is get my diet back in shape. I ate out way to much last month and I don't feel nearly as healthy and I definitely feel much more poor. I have been keeping a batch of this granola on hand for breakfast and have been trying to cook dinner more often but lunch is always a pain. It is just too easy to overlook and then just grab a bite with a friend. As much as I love those lunch dates, I know I need to start making a few lunches at the house. I have been looking through some of my favorite recipes to find a few easy lunch recipes that are delicious and easy to take on the go. Here are some of my favorite so far.
