One of the hardest meals for me to be consistent with is breakfast. I know how much better I feel when I have a great breakfast but I also am terrible at waking up on time and cooking it. One of my favorite ways to get past this is to have sweet potatoes for breakfast. I know you have probably been reserving these for the dinner table but you can roast them the night before and they are delicious for breakfast. You can top them with everything from granola, nuts, kale, a poached egg or whatever else your heart desires! I love doing a mixture of nuts and granola with a squeeze of orange. It is quick, easy and delicious.
You can bake the sweet potatoes up to 3 days in advance and have breakfast stored for days! Sweet potatoes are an amazing addition to your diet so if you haven't been eating these beta-carotine filled veggies don't hesitate to start!
