taco time


One of my go to meals on a busy night is tacos. I am a believer that if you give me a tortilla I can transform any leftovers or pickings from the garden into a quick and easy taco. Summer seems to be the time that I plan meals the least so I always try to have tomatoes, avocado, cilantro and peppers on hand. To me these ingredients have endless possibilities but frequently end up in a tortilla. Last night I decided to take these ingredients and a few more and whip up some fresh and delicious black bean tacos.



Black Bean Tacos with Avocado Salsa and Cilantro Slaw
Serves 2

4 flour tortillas
1 cup black beans*
1 tomato
1 avocado
1/2 medium onion
1 jalapeƱo (less if you don't want a kick)
1 clove garlic
1 small handful of cilantro
2 large leaves of green cabbage
1 lime
Greek Yogurt



1. Chop the tomato, avocado, onion, jalapeno and garlic. Combine all and squeeze in half of the lime. Season with salt and pepper

2. Thinly slice the cabbage and chop the cilantro. Combine the two and add the other half of lime.

3. Assemble the tacos starting with greek yogurt, followed by black beans then salsa and slaw.


This recipe can be easily altered by using any other peppers you like or adding cheese. You could also use guacamole instead of salsa. Chicken or fish would be great substitutions for the black beans.



* Cook your beans from scratch!
